Surprisingly, this cake is not from Jamaica. It originated in Britain and is named for the Jamaican ginger used in its creation. Jamaica was a British colony and was famed for its spices and sugar production. Exported back to Britain and Europe, ginger became less expensive and more widely available, leading to the Jamaican ginger cake.
